Our Philosophy: Roasting for Origin
We believe our job as roasters is to let the coffee speak for itself. Every bean tells a story of its soil, climate, and farmer's care. Our artisanal light roasting philosophy aims to honor that by preserving the delicate floral, fruity, and sweet notes that are unique to each farm and varietal, rather than overpowering them with a 'roasty' flavor.

Our Small Batch Method
Ever wondered why some coffee tastes vibrant and alive? It’s all in the roast. Our meticulous five-step process ensures every limited batch achieves its full flavor potential, consistently.
1. Green Bean Analysis
We thoroughly analyze each new lot of green beans, assessing moisture content, density, and varietal characteristics. This critical first step allows us to craft a unique roast profile specifically designed to bring out its best.
2. The Charge
Precision is paramount. Our roaster is carefully preheated to the optimal temperature before the perfectly measured batch of green beans is introduced – 'the charge' – initiating the transformation.
3. Monitoring the Roast
During the roast, we constantly track temperature, time, color development, and aroma. We pay meticulous attention to the 'first crack' – the pivotal moment when the beans expand, signaling intense flavor development.
4. The Drop & Cooling
At the precise peak of flavor development, the batch is 'dropped' from the hot drum into a cooling tray. Rapid cooling is essential to instantly halt the roasting process and lock in the intricate flavors we've worked to achieve.
5. Degassing & Cupping
Our freshly roasted beans rest for 24-48 hours to properly degas. Then, each batch undergoes a thorough cupping session, where we taste and evaluate to ensure it meets our rigorous quality standards before it's approved for packaging.
